This is so easy to make using cooked spicy gammon (see The Mother Ship Spicy Slow-cooked Gammon). I made a gigantic half pounder (250g) which my partner couldn't finish in one sitting!

- 125g gammon
- 125g turkey mince
- 30g Cheddar cheese, grated
- Red onion (sliced)
- Coriander leaves
- Tomato ketchup
- Oil for frying
- Shred the gammon and mix with the turkey. Compact it with your hands until the mixture is firm. Add salt to taste - fry off a small amount to decide how much salt it needs depending on how salty your gammon is.
- Shape into a burger!
- Fry in oil over a medium heat for at least 8 minutes per side. Turn up the heat towards the end to char the burger.
- Pack grated cheese on top of the burger and place in the oven or under a grill (broiler) until the cheese melts.
- Serve in a toasted bun with the red onion, coriander leaves and ketchup - or any other toppings you desire.
