This recipe makes 2-3 pie crusts, depending upon the pie and how thin you roll it.
1 egg yolks
1 cup butter (softened)
2 cups flour
1/2 tsp salt
1 tsp vanilla
1/2 cup sugar
Simply toss all dry ingredients into a mixing bowl, and fold in the moist ingredients. Be careful not to over-knead it, as with any pie crust, to avoid it becoming to tough. Roll out and place in pie pan. The crust will shrink as you bake it, so be sure to leave about 1/2 inch of extra dough around the edges of the crust.
This crust goes with just about any pie (because let's be honest, sugar cookies are good with anything!) but my personal favorites so far are fruit pies and pumpkin pie.
*When making for pumpkin pie, I add just a pinch of brown sugar into my crust-dough.
