I made this as a side for dinner last night. Smart phone is still being stupid so no pics. I have been playing around with this recipe for sometime and will continue to do so - different spices.
In the south sweet potato and yam are used interchangeably. I am talking about the orange fleshed yam/sweet potato. Call it whatever you want.
One potato the length of my hand is enough for the two of us.
Ingredients
1 sweet potato
3 tbsp. coconut oil or vegetable oil (I have tried it EVOO - not the best)
2 tsp. ground cinnamon
2 tsp. smoked paprika
1/2 tsp. nutmeg
1/2 tsp. cayenne
1 tbsp. Demera sugar + more for dusting
A pinch of turmeric
Sea salt and fresh ground pepper
Taste add more cayenne if you want it really hot. More salt and pepper if needed.
Method
I rarely use the same spices in the same quantities. Always room for tweaking.

Method
- Heat oven to 375 degrees F
- Line a rimmed baking sheet with foil
- Peel the potato and cut into fries (chips)
- In a large bowl whisk the rest of the ingredients together
- Add The fries to the bowl and toss until well coated
- Arrange on the baking sheet in a single layer. Drizzle with remaining mixture
- Sprinkle with at least a tbsp. of Demera sugar - more for a little extra sweetness.
- Cook for 10 minutes and then turn the potatoes.
- Cook for an additional 5 to 10 minutes - until tender.
- Taste and add additional sugar, salt or pepper as required.
