Sweet peppers

I like to use sweet peppers for adding a little flavor to my gravies and my soups. I would also sometimes add small pieces of it to my rice. They are also good to use in potato salad as well as in omelette. However, I tend to like the green peppers better, since I find they have a stronger flavor than the red and yellow ones. When making a toss salad, however, I would add in pieces of red and yellow sweet peppers since they help to make the salad more colourful.

How often do you use these peppers to season your meals, and do you have a favourite one?
 
I grew green peppers in my garden this year, and found that most often, I'd just cut and serve them raw. My kids love them dipped in ranch. Otherwise, I'll add them to salads and fajitas. Once in a while I'll do stuffed peppers, and every time I make them I love them, but they just aren't on my regular radar, you know?

I've never really used them as a "seasoning" though. Certainly don't add them to gravy or soup of any kind, but since you mention it, it sounds like it would be good.
 
My favorite are red and yellow peppers. I roast them and use them for salads, in a pasta dish, with rice or in sandwiches. They are great raw used to dip in hummus too as I don't like carrots or celery raw.

I also love them on a pizza, with some mushrooms and onions, the flavors complement each other with a good tomato base. Green peppers don't work as well and you lose the flavor if you add them, so red and yellow are the best and most versatile.
