So what is the spelling boudian? Is that a different blood sausage?

Boudain is a Texas version. The original Creole is boudin. Boudain came *after* boudin.

There is boudin blanc, no blood or liver, and boudin noir, with the blood and liver. Boudain is a different thing altogether but a similar recipe.

Yes. Ideally. That way it gets seen by all of us and you don't need to tag someone and hope.

Yes, you are probably correct on that point. It's a big thing around here so my view is larger.

I see the original boudain tag has been edited to "boudain/boudin" so that should suffice for the scope of this board.
