This is my tentative menu (which can change at any time LOL)

Funny you bring this topic up msmofet , I just made lunch reservations for us three at one of the local restaurants that does still serve Turkey and will be open.
This is a very small, rural, mountain town and folks don't dine out on holidays, but I just don't care to go to Mom's Senior Living Community's dining room this year ... they don't serve a "traditional" Thanksgiving meal, and I DO NOT want to cook for just us three.

I don't usually eat before I get the turkey prepped. The cheese plate is more of a brunch/appetizer. After getting the turkey in the oven and doing some prep work. I make the dressing/stuffing last minute on stove using the turkey dripping. And also the gravy using drippings and fond, creamed onions get done last minute. So, need something to eat between.
Dinner is typically hours later.

Still if I caught someone eating the cheeseboard before the main event they might the wooden spoon 😂

In the USA, we always have had appetizers/finger food to eat while drinking some wine and waiting for dinner to be served.
Years ago, when we had large family/friends Thanksgiving dinners, there were MANY courses. And one was an antipasto with many meats and cheese.
The holiday meal was soup to nuts (literally). There was time between the courses, and the finger foods were always out. The meal/food started around 11:30am and ended around 9:00pm after dessert, nut bowl and coffee.

Most of my family are gone now. Only myself and my two girls, so I still make favorites in small portions.

I don’t really know what’s going on for food as far as Thanksgiving goes, as we’re set to travel again this year, this time to Rochester, NY. We traveled last year to spend it with family and it went really well.

I have some ideas of things I’ll contribute, but it’ll be drinks, appetizers, and a dessert.

No. I make small portions of holiday favorites. Usually enough for dinner and one or two leftover meals, some sandwiches, and soup. Thanksgiving is on Thursday and by Saturday leftovers are usually gone.
Only three of us but why should I not make what we like in small amounts?
I use one or two sweet potatoes for the casserole, 3 or 4 small Yukon potatoes and one small turnip root, etc. Small amounts.

Oh I quite agree. Why not enjoy everything. I was just a little taken aback at the number of different dishes!
When I make Christmas Lunch, the same thing happens. The wife always says "that's waaaaay too much!" but the roast potatoes disappear in a flash, the turkey is used for sandwiches, arepas, empanadas, the carcasse goes into making New Year lentil soup.. nothing gets wasted.

So do you roast a whole turkey, or just a turkey breast? During the 2020 quarantine year, my husband and I did a turkey breast since it was just the two of us and it was quite nice.
 
We will be somewhere in Texas but I am not quite sure where we will have Thanksgiving. Probably at my cousin's house in Port Arthur, but maybe at my brother's house in Houston. If we do the latter, I will be making some sort of seafood dish probably instead of the traditional meal. If we are in Port Arthur at my cousin's, I will be making a whiskey and chocolate pecan pie and bringing the wine.

My Supermarket gives a free Turkey after points are reached. I get the smallest I can find, usually around 12 lbs.
