The CookingBites recipe challenge: tinned/canned tomatoes

Okay, here it is!

Okay so even though I probably would have time to write up my other recipe (my work screwed up and didn't send me all of the project materials in the FedEx package so the rest will not arrive until tomorrow), I am not going to bother doing so. The second recipe was very good but not as good as the one I already posted so I will just leave it at that. I might go in and add some information and photos on the same page as my first recipe since it is relative information.

Ok, I’m prepared to name a winner out of the dozen-and-then-some that were submitted, but first, I want to thank everyone who participated, either by submitting recipes for consideration, or by joining in the conversation. That’s a good part of the fun of these things!

oldjanie with an excellent recipe for Ratatouille - congratulations!

When I settled on canned/tinned tomatoes and excluded fresh tomatoes, it was for a reason - I wanted to steer folks to their pantries (a “pantry raid” if you will :wink: ) and think about what to do with a canned/tinned item. Also, with fresh tomatoes having such a short season (here, anyway), I wanted to see some creative use of the year-round variety.

Success! Excellent recipes all round, and the winning one intrigued me with the idea of roasting the tomatoes, something I only ever think to do with fresh. That’s what hooked me!

oldjanie - now it’s up to you to choose an ingredient for our next challenge and post it in this thread. Once that’s done, we’ll set up the new challenge. You can see all the ingredients chosen to date here. It’s perfectly fine to choose an ingredient we've had before, so long as it wasn't too recent. Once that’s done, you’ll get to judge the next round.
