The easiest sponge recipe there is. So easy in fact that even I can make it. This sponge cake never fails.

weigh 3 eggs in theyre shells.
Self raising flour
margerine or butter
Caster sugar
1 level teaspoon baking powder.

whatever the eggs weigh, that is how much all the other ingredients should also weigh.
Cream together sugar and butter or margerine.
sieve flour and baking powder.
Break one egg at a time into the mixture and add a couple of spoons of the flour as well. Mix well. Add the other eggs and a portion of flour until all the ingredients have been added and mixed well.
put into a pre heated oven at 180c. Bake in centre of the oven for aprox 40 minutes. The time will depend on
The weight of the ingredients. Check after 30 minutes by using a knife or skewer. If the knife or skewer comes away clean, then the cake is cooked. Leave to cool and finnish the cake In your usual way.
 
I'll give it a shot, a friend of mine is coming to visit and loves sponge cake. I never have made one that I would want to feed anyone so I hope this one works!
