Vegetables as ingredients in cakes, drinks and desserts

I love carrot cake, although I don't particularly have a sweet tooth. I've also made some decent sweet wines from vegetables in a previous existence. And of course, I know that people drink vegetable juices, although personally I have no idea why!

On another forum, the members were talking about using this season's glut of courgettes in cakes, so that got me thinking - are there any other vegetables that are used in cakes and desserts, rather than in savoury recipes? Do tell!
 
I gather beetroot works well in chocolate cake - moistens it, and enriches the colour.
