That's my favorite roast beef roast dinner.Yep!
Arby's isn't "Roast” beef. It's more like pressed and formed meat. Roy Rogers was real roast beef. Can't find many if any Roy Rogers anymore. I really liked those beef and cheese sandwiches with real au jus gravy added.It was way better than Arbys!
I made a salt, pepper, garlic, paprika, and thyme dry rub. Cooked it on a raised rack in the oven at 500 degrees for 15 minutes. I lowered the temp to 275 and cooked it until the center temp read 125. I let it rest on the counter for 30 minutes. Wrapped it in foil and let it rest in the refrigerator for 3 hours. Then we sliced it up.
To heat it up, I used the juice from the roast, red wine vinegar, and beef stock (with some additional seasonings). I heated this to a boil and pour it over the meat. It worked perfectly. I hosted a 13 player poker game. Everyone raved about the roast been sandwiches!
