Ratatouille made with home grown tomatoes, home-grown courgettes, home-grown thyme, home-grown garlic, and the rest shop bought.

I got the BBQ out because I had double the quantity of most things (let's just say a single aubergine came in at 1Kg and my OH bought 2!) Using there hot plate on the BBQ allows me to cook more on over go, plus it was warm out today.

Served with brown basmati rice and some chia protein nuggets.
