What did you cook or eat today (April 2026)?

Today I made some batter and had some Onion Rings and a Blooming Onion (with a side of some frozen BBQ wings:

It was the first time I used this recipe for the batter and when I first tasted it, the spices weren't quite to my liking - until I dunked them in the dip and then they came to life and it was really tasty! Light and crisp batter with succulent sweet onions 😎

I thought I had some flour tortillas but all I had were small soft white corn, which I pan fried in some of the pork juice and fat from the crockpot. I put some shredded Monterey jack cheese on them while they were in the pan, then on the plate I added red cabbage, carrot, lime crema, fresh tomato salsa, pulled pork, and Chipotle Tabasco. I sliced some avocado and forgot to put it on the tacos, lol. But damn they were good! And messy.

Repeat for breakfast (4:30pm) but just 1. I remembered the avocado this time.

I had 16 large flour tortillas so I made the GG's chicken wraps and quesadillas. "Fresh" tomatoes are stupid pricey @ $2/lb so I used a can of peeled Red Gold brand Roma tomatoes and some of what I didn't use I ate for breakfast. Pretty tasty!
 
I wanted to make a slow cooked pork dish tonight, but Mrs. GH and I were running around all day and working in the yard. It was well after 7 until I came inside and there was just no time left to make what I had planned. Instead, I grabbed a bottle of marsala wine, some oyster mushrooms we'd just bought, a few chicken breasts from the fridge that I needed use anyway, sliced the breasts in half, and made chicken marsala tonight. I used instant mashed potatoes just because of the time.

I went to a birthday party today - Klaus was 5 years old. 😍
His mum is a good friend of mine and also a very accomplished chef, so I knew I was going to eat well this afternoon.
Mini empanadas filled with minced beef. Arepas with reina pepiada (avocado, cooked chicken, touch of mayonnaise), with cheese, and with pulled, spiced beef. Tequeños (cheese pastries - a Venezuelan classic). Chinese rice bowls. Sliders. 4 different mini pizzas, all of which were absolutely divine, but the best was with Manchego cheese, Iberian ham and just a touch of truffle oil..Chorizo croquettes: here's a picture of how they were served: on "gold" forks in a sea of rosemary leaves.
