What did you cook or eat today (April 2026)?

I smoked a spatchcocked chicken this afternoon. Easy peasey, for the pickings.

I finished loads of chutneys, hot sauces, pepper jellies, etc. for the weekend bazaar - yesterday. Great, I thought, I can actually cook for myself today.
There was a kilo of minced beef in the freezer, 3 large cans of tomatoes and a bunch of lovely courgettes(zucchini) hanging around.
1) Pasta sauce - always a good standby, because we'll eat pasta 3 or 4 times a week.
2) Fried kibbe. I suppose, if you break it down to basics, it's a Lebanese meatball.
3) Stuffed courgettes, Lebanese style; a recipe from a good friend. Courgette rounds stuffed with minced meat and baked in a tomato sauce.
4) Kashmiri dum aloo - whole potatoes, gently fried in ghee, and smothered in a spicy yoghurt sauce.
5) Banana bread - two slightly overripe bananas waiting to be used up
I parboiled the potatoes while I defrosted the meat and started the pasta (tomato) sauce.. Chopped a couple of onions, added spices, cooked the meat for the stuffing - and the pasta sauce was ready. 40 minutes. : GREAT!
Peeled the potatoes, pricked them all over, ground the meat with spices, bulghur wheat and onions (food processor) while the other stuff was cooking - another 20 minutes. Whacked all the banana bread ingredients into a bowl. GREAT!
Ready to make the kibbe, stuff the courgettes, smother with tomato sauce, fry the potatoes and put the banana bread into the oven...
Thunderstorm and, therefore, power cut :hyper: :hyper: :hyper: 1½ hours - electric cooker.
I ended up with pasta and tomato sauce. The rest is in the fridge waiting for tomorrow.

I Bak Chor Mee (Mushroom Minced Meat Noodles) from the downstairs hawker centre.

If you get a takeaway the guy gives it in a plastic bag like this; as if you've won a goldfish at a funfair:

It has liver and shiitake mushrooms which I don't eat, so I give those bits to my wife. I've given up asking the cook to omit those ingredients because a) they never understand me b) their muscle memory from making hundreds of bowls a day just means they put them in automatically.

Anyway, it's super delicious - spicy sambal, vinegary and peppery, bits of fried pork lard, the pork balls and mince. I love it. And it's only like $3.
