What did you cook or eat today (April 2026)?

I really like stuffed poblanos so I'm trying to grow some this year. The ones in the store grow so there's not much room to stuff, maybe mine will be different. 🤞
I blister mine on the gas stovetop so they become pliable, and I open them on one side lengthwise, pulk out pith and seeds, stuff them, and use a toothpick to seal them back up.

Now I'm wanting chile rellenos.
 
They're size is okay they just have this indentation in the middle that "knocks out" stuffing space.
I'd either grill them over an open flame, or briefly blanch them. That way they're more flexible and easier to stuff.
So now you simply have to make Chiles en Nogada (Stuffed Poblano Chiles with a Walnut Cream Sauce)!

Can't eat walnuts, have to be satay type sauce/fusion thing.

Usual to part cook them first (I steam/blister for stuffing), side slit to stuff thru 🙂
Still like an envelope but roomy.

is that the teeth issue? walnuts can be ground up and used, plus they are a great one for soups and stews because they are a softer nut, and soften when cooked as well. Also chopping them up (which is the norm for a lot fo recipes they are cooked in) reduces them to smaller than minced whatever meat so they don't need chewing - at least not the way I chop them up.
