My youngest finished this year's first semester in college and was coming home for a month, so I wanted to have nice dinner ready for him to return. I had a window today between 11:30, where I wrapped up with work, and 6:30 where I needed to head to my company's Christmas Party. In that interim, I made braised short ribs (and chuck roast) with roasted cauliflower purée and glazed carrots, topped with gremolata for him. The braise alone was 3.5 hours 284*F/140*C, and I worked almost non-stop in that interim to prepare everything else. This cooking can be a labor of love, I'll tell ya!
