Recipe - Red beans and rice my way

I thought I was going to have to snatch a quick salad before my early evening language class, but the student postponed.
That meant I could stuff a huge potato in the oven to bake, and slather it with butter, cream, cheese, tomato & onion salad, and a side of sauerkraut (because there was some in the fridge!)
 
Not a lot to show from yesterday as my son cooked us his Lemon Paprika Chicken which was delicious and eaten too fast for photos!

Some Oi-muchim (cucumber salad) I had forgotten about that had been busy pickling itself in the fridge.

Tasted very different from the fresh made version, the salty soy sauce had pulled a lot of liquid from the cucumber and the garlic n shallots had become very mild. It was like a different recipe but everyone loved it and the bowls were empty so now I’ve got two cucumber salads for the price of one!!

And some bargain ‘Chinese chicken’ I picked up at the butchers.
Their scales were down (yes butchers scales now require updates and can go down!) so they could only sell stuff they’d already packaged and weighed (shame because the counter was groaning under the weight of a fabulous selection).
I recognised the generic red Chinese powder marinade they used from the ingredients list on the packaging and know it tends to be quite bland so decided to smoke them. I feel the need to explain that so you know they aren’t burnt 😂

My dog embarrassed the hell out of me by turning her nose up at a fine sliver of steak the butcher kindly sliced straight of the carcass for her. She took it eventually and they found it amusing but honestly Doodle is a weirdo!

Picked up some wings at the butchers. £2.99 for twelve.
BBQ flavour and the first listed ingredient was sugar so I wasn’t at all hopeful but I was wrong, they weren’t too sweet!

Next time I’ll trim off the wing tips and chuck them in a little later into the cook time, they defo didn’t need quite as long.
