That's it! I've made it just with the rice and EVOO. I made it using an induction hob set on around medium and when the rice was cooked started drizzling oil around the edges and cranked up the heat. Someone sent me some saffron so I need to make that. 👍
We love it. It has become a very definite favourite here. Just not in the middle of summer with a 7 day heatwave pending!

Added some water, green beans, bacon, paprika powder, kashmiri chili powder, dried onions, plenty chickpea flour and deep fried them
 
We went out last night to a place we've always liked before. Won't be going back though. Upscale Italian. Frito misto, calamari, shrimp, mushrooms, zucchini, starter was okay, though some of the calamari was tough, and some was tender. Not sure how they managed that. Craig got eggplant parm. Eggplant was sliced super thin. With breading, maybe 3/8 inch thick, maybe. He said all he tasted was breadcrumbs. I had a papperdelle dish with pesto, oven dried tomatoes, and grilled chicken topped with ricotta salata. Would have been good, but they either drained the pasta very poorly or used way too much pasta water to thin the pesto, as there was at least 1/4 cup of pasta water with a film of oil from the pesto in the bottom of my bowl. You can see the liquid around the edge of the bowl.

The other thing that is just a pet peeve of mine is our server opened the bottle of prosecco, without showing it to me (they had more than 1 choice of splits), and then poured it straight down into my glass, which caused a big head of foam that totally destroyed the bubbles, leaving me with what amounted to not even a half glass of still wine even though she filled it all the way to the top with foam. The glass should be tilted and the wine poured down the side to preserve the bubbles.

Today I had leftover black eyed peas soup, all gone. Fig and olive crackers from Trader Joe’s with mushroom/chicken mousse. Dessert was ice cream with poached pear, no more after today. Very pleased that I ate most of my Christmas food.

Hey, rascal, do you know that menudo has tripe in it LOLOLOLOL!?!

I'm laughing because that was the first soup served to me when I was 16 by my high school boyfriend's mom (Mexican, obviously). I didn't eat the chewy things in it and they didn't tell me what it was until I was nearly finished. The broth and veggies were good though.
I didn't know that..I havnt had that soup either.

I dont doubt your critique but me being a.newbie to Mexican. You obviously know the food really well but me.......

It was Italian food per the second sentence, not Mexican.
 
I was knackered yesterday and shirl said " do you want me to cook tea in the air fryer. " she did it once and it was ok.?
So I said yes. I heard her mutter something about Moroccon.spice.
On serving it looked ok. First bite into chicken and I spat it out.heat was choking me up. I ate chips and egg.
She ate her chicken.
Never again lol
