Me not eating or knowing much about Mexican food I wonder if I would like it ??
I dont doubt your critique but me being a.newbie to Mexican. You obviously know the food really well but me.......

Yeah she said they wouldn't go back, so...and I'm sure you've eaten decent Italian food and you'd know.

Also I do think you'd like Mexican food as long as it was prepared properly and it wasn't menudo (tripe soup).

I've just been grazing on leftovers. I had some leftover quiche earlier. Here's a couple photos (I made it yesterday). It was ham, gouda, gruyere, and veggies. The crust was a little dark on the edges but it was really tasty.

Later I had some Panda Express teriyaki chicken, then a small piece of leftover ribeye steak.
 
I’m making pork belly I spiced and seasoned in the pot with the sous vide wand doing its magic.
I was dubious that the thin silicone lid I bought would stop much of the water loss and thought it would probably evaporate and cut out during the 12 hour overnight cook but no, it’s as full as when I left it last night!
So soon hopefully I’ll have some nice fat slices of pork belly to fry 😋
