I'm confused here, the recipe calls for 10 Oz of parmesan or (1 and 1/4 cups). We'll I'm at 1 and a 1/4 cups and this is only reading 2.1 Oz!? It's set to pounds Oz instead of fluid Oz. The scale was zeroed out and I tared it correctly with the bowl.

That, for me, is the problem with cups. They're innacurate.
You can fill a cup with grated Parmesan and it'll be 2.1 oz. If you return it to the cup, and press it down a bit, it'll be 6 oz, for example. If you really tamp it down until the cheese fits tightly, it might be 8 - or 10.
Something with that is horribly inaccurate, I usually measure by weight, but that read only 2 Oz and that is way more than 2 Oz. In that bowl. The scale was zeroed and tared correctly, so I have absolutely no idea what that reading is about.

Terribly long day today with work, so when I finally got away, I went into town for a few things.
Noticed that the brand of frozen pizza we like, their white pizza is being discontinued, so it was on double-secret extra super discount, so I grabbed one of those for tonight - MrsT’s favorite style of pizza is white pizza. No cooking for me (though I’m about to go make a quick pepper relish because my neighbor dropped off a bag full of anaheims).

Don't see anything wrong with that. It's a lasagna with mushrooms, right? I'd just measure out 10oz Parmesan and reckon they screwed up on the "cup"measurement for that.
I take it there's feta on that white cheesy pizza?
10oz is really rather a lot of parmesan. I think looking at the ingredient list for the recipe that the amount is not particularly critical here. Yes there is a problem with the conversion from Oz to cups in that list of ingredients. Personally, I would add the parmesan, to taste.
