What did you cook or eat today: July 2025

I made some tomato jam to replace boring, regular tomatoes for a BLT that I was craving. Thick cut, smokey bacon 🥓, sourdough bread and this tomato jam is amazing. Sweet, acidic, freshly grated ginger, a touch of all spice, A.C.V. Cinnamon and a touch of heat. You'll never go back to boring tomatoes for a BLT again. Paired with some potato salad.

This is a simple cold/room-temp dish of green beans, potatoes, and fresh mozzarella, tossed in a dressing of store-bought pesto, red wine vinegar, and olive oil. Topped with toasted pine nuts.

Went to lunch at darfield hotel.
I had blue cod beer battered. 4 x big pieces of fish 🐟. 2 would have been plenty but I ate it all
Wife had 3 bao buns..she raved about them.
Now I need a bun filling, preferably Korean 🐔 chicken.

HELP?

Bao buns are Chinese though? I know not much about it. medtran49, badjak and Windigo also might have some ideas.

Bao pao is a common snack in Indonesia, originating from the Chinese.
I make them at times, but free style on the filling.
I got some spicy rendang and that would work nice.
I feel sourdough rendang bao pao coming up :)

I caught a short lived, thankfully, virus so ate very, very little Monday and Tuesday. Craig had to go to the DMV Wednesday because his license wasn't gold star compliant and his license expired at end of this month. Required a bunch of stuff to prove he was himself, plus $55, plus wait time of a couple of months since Wednesday was the soonest I could get him an appointment, then it took over 2 hours of waiting even though he had an appointment. It took about 20 minutes once he was actually called to window to have new license in hand. We got burgers out after.

Tonight is quiche, using this pastry recipe, Recipe - Vidalia/sweet onion tart , then I sweated some leeks with butter and thyme, parcooked some asparagus, shredded some prosciutto di parma, and comtè cheese. Watermelon as a side.
