What did you cook or eat today (May 2026)

Trying to clear out my freezer so this chuck steak from the back of it got a chance to get in the pan. After a defrost it had a dry-brine in the fridge for about 3 hours, then an hour or so on my counter top before hitting my stainless steel for about 2.5 mins a side.

I think I got a pretty good sear on it:

I made a couple of hand rolls with sushi rice, cucumber, green onion, shredded carrot, avocado, with a smoked salmon, cream cheese, kewpie mayo and sriracha mixture, then a drizzle of toasted sesame oil, and furikake sprinkles. I wish I'd had some tobiko or masago to add. But still really good.

Trying out quite a slightly involved recipe from Hot Thai Kitchen which is Boat Noodles.

I started by making my soup yesterday which has a lot of ingredients and a few steps, although not that complicated.

Lots of big pork shoulder bones in there (which I finally managed to get for a reasonable price - about $4 USD for 2kg), plus that giant beef tomahawk rib sticking out that I was totally unable to break smaller, even with my cleaver! Well, it came in handy for stirring.

I'll be making a bowl of the actual final dish this evening.
