Lunch was a homemade Italian hero - sweet Sopressata, Dilusso genoa salami, cooked ham, provolone, lettuce, tomato, fresh basil leaves. Dressed with olive oil, red wine vinegar, my house blend all-purpose seasoning, salt, pepper, and oregano. On a semolina loaf.

Yep, it's a texture thing, so I rather use yoghurt, sour creme or creme fraiche.
Thats in general.
For a potato salad I would probably go vinaigrette and/or yoghurt

Potato salad in the summer is mayo since it's refrigerated and a vinaigrette in the winter since you can heat it. Like hot German potato salad.

I adore yoghurt in potato salad but I didn’t have any this time
Mayonnaise is a good option to me anyway
