What did you cook today (Jan 2016)?

This morning was a pretty simple broccoli and cheese omelette (provolone), along with some toasted pumpernickel bread and coffee. I wanted to make something bigger, but just didn't have the energy to do so.

For lunch later though, I plan on making another batch of popcorn chicken, with these boneless skinless chicken thighs I have in my fridge. I made a batch last night that turned out pretty good, with just some flour, an egg wash, and some seasoned breadcrumbs, and they turned out great. My only gripe was the breading didn't brown up evenly, so there were dark spots, and other areas where the breadcrumbs didn't toast up at all.

This time around, I may go back to toasting the breadcrumbs up in a pan, which I've done in the past and it works out well. I may also add some spices to the breadcrumbs while they are toasting up, such as paprika and cayenne, for some extra color and kick. Also, I think I'm gonna try some hot sauce in the egg batter.
