When you're reading cookbooks, are there any ingredients or recipes you wish there were more of....or less of even?

Yep, double herbs and spicesI agree.
I generally just double herb and spice amount and reduce salt & sugar.
They could remove the desert section in most cookbooks as far as I am concerned.
And the "how to use your weighing scale" bitNot so much ingredients or recipes, but that utterly boring part at the beginning where they rabbit on about "essential kitchenware" and "what you must have in your pantry".
