What to do with 2½kg of fresh apricots?

Trying to work my way through a similar amount of mango's and thinking you could make blatjang, or chutney.
Maybe even pickle some (sweet & sour pickle?)
 
What about using the kernels to make your own amaretto? It’s pretty basic mix of sugar, vodka and apricot kernels that you leave to steep.
We're not big drinkers, so no vodka in the house. The kernels have gone back out under the tree. I've actually had to buy 2 bottles of wine in just to make our Christmas meals for the next week. One dish needs red wine (the mushroom dish) and the other needs white (a chickpea pistou).
