Yam Knadles:
Ingredients:
1) Yam, large - 1/8
2) Eggs - 1
3) Flour - 4 to 6 tblspns.
4) Half n half - 1/8 cup
5) Butter - 1/2 tblspn.
6) Bacon - 2 slices
7) Onion - 1 slice
8) Pepper, Serrano - 1
9) Bread - 6 to 8 slices
10) Allspice - 1 tspn.
Procedure:
1) Ensure the butter is soft before beginning.
2) Boil the yam to soften it up.
3) Chop up the yam.
4) Tear up the bread into 1/4" pieces.
5) Fry and then cut up the bacon into pieces.
6) Dice the Serrano pepper and onion.
7) Mix all ingredients into a thick pasty dough.
8) Oil a baking pan.
9) Separate the dough into optionally sized knadle balls.
10) Line the baking pan with the knadles.
11) Preheat the oven to 350F.
12) Bake for 30 to 40 minutes.
14) Remove to serving plates.
15) Serve.
Knadles are best served as a side dish.
