I haven't had them in years so I'm going full out, tallow!

My eye round roast doesn’t give off much fat. I use the little it does to make roux for my pan gravy. I use butter for my pudding.

Hmm, might have to go with a mix... Come to think of it the offal I use has lots of fat.
