Ham Balls in Pineapple Sauce
Makes 18 meatballs

Ingredients
1/2 pound ground pork
1 pound ground ham
3/4 cup soft breadcrumbs
2 eggs
1/2 cup milk
2 TB minced onion
1 cup crushed pineapple
1/2 cup brown sugar
1 TB vinegar
2 -3 TB prepared mustard

Directions
Mix together the pork, ham, bread crumbs, eggs, milk and onion, then form into 18-1 1/2" balls.
Place the ham balls in a baking dish.
Mix together the pineapple, sugar, vinegar and mustard.
Pour over the ham balls and bake at 350°F for 1 1/2 hours, basting frequently.

There is always room for new meatball recipe! I'd never have thought of combining pineapple with meatballs - but why not? Pork/ham and pineapple is traditional combination.

I note there is a long baking time and by the time this is cooked the sauce must be very reduced and concentrated in flavour. Is there danger of burning the sauce?

It did come out very thick, but I’d recommend keeping an eye on it and adding a little water/juice along the way if it looked about to burn.
