Recipe Mexican Fresh Chorizo

    2 pounds finely ground pork
    4 tablespoons chile powder
    2 tablespoons paprika
    2 tablespoons dried oregano
    1 pinch ground cinnamon
    1 pinch ground cloves
    1 teaspoon ground cumin
    1 teaspoon salt
    2 cloves of garlic, crushed
    1/2 cup vinegar

    In a large bowl, use your hands to mix the ingredients until they are well combined. You can freeze the sausage in an airtight container for later use, or use it immediately in your favorite recipe calling for Mexican chorizo.

    Thank you! I will make this for that Yucatecan Style Lasagna. It may be a few days time as I am away at the moment.

    This is almost exactly how I make mine, except I add chipotle peppers with adobo sauce, and a shot of tequila (or more, depending on how much I'm making).
