Pan Seared Salmon with creamy Lemon Butter Sauce and crispy salmon skins

- 2 salmon fillet pieces, skin on
- 1/2 shallot
- 1 clove of garlic
- Juice of 1 lemon
- ½ cup cooking cream or heavy cream
- ½ cup of chopped parsley
- 2 tbsp butter
- Olive oil
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Remove the skins from salmon carefully with a sharp knife.
- Drizzle and spread few drops of olive oil on the skins.
- Season with a pinch of sea salt
- Place the skins between two sheets of baking paper on a tray.
- Put a heavy and flat object on top of the skins to prevent curling.
- Bake for 30 min at 180°C / 350°F
- Peel and finely chop the shallots and the garlic.
- Finely chop the parsley leaves
- Pre-heat a frying pan (medium) and add the lemon juice
- Let it reduce to half and the chopped shallots and the garlic
- Add the cream and let it reduce to half again.
- Once reduced, slowly add the butter and stir constantly.
- Season with salt and pepper.
- Let the sauce simmer until it thickens to desired consistency.
- In a separate pan, sear the salmon with serving side down. (The duration may vary depending on the thickness of the fillet.)
- Remove the salmon using a fish spatula and place on plate.
- Add the parsley to the sauce, mix well and pour over the seared salmon.
- Serve with the crispy the skins from oven, by gently removing the skins from the baking paper (Optional)
