The Alphabet Game: Dishes using Za'atar

Tomato doesn't belong in a Mexican or Tex-Mex enchilada sauce.

I've never made enchilada sauce before but of the recipes that I've researched, many have tomatoes.
 
Just looked through several of our Mexican/Tex-Mex cookbooks and don't see any red enchilada sauces that use tomato. The enchiladas themselves may have tomato in them, but not the red sauces. The internet is full of recipes where people have subbed stuff. Heck, I've seen people refer to tomatillos as green tomatoes. Tomatoes are in the nightshade family while tomatillos are in the gooseberry family.
 
Stuck on "L"? There is a chili pepper where the first word is the name of a citrus fruit and the second word begins with "D". It is also the name of a hard candy.

Mulato Chili. If you had a Mulato and Ancho side by side. The Mulato could only be distinguished by its darker color.

"N" could be a very, very spicy one! And deadly as the snake family it is named for.

I make my chili powder using Mulatos. It gives it a nice rich color as well as flavour.
