I’ve been making these biscuits from regular potatoes and not the sweet ones.
I’ve boiled then crushed them, added sugar, butter, egg and cocoa.
They turned out very soft and very good!

Slipped out (aka 3hrs out of the house) because I needed to buy some knitting needles for a new Fairisle project and oddly didn't have the right size.

The place has a cafe, so given that the carrot cake was dairy free, we had a piece each....

It wasn't so bad actually.

I've not cooked a single thing since arriving on Tuesday. Yesterday was a Gregg's sausage roll for breakfast, ratatouille and rice for lunch, and another "Wok to Walk"about 10.30pm, this time with bok choy, mushrooms and hot Asian sauce.

I made this Italian chocolate potato cake about 18 months ago and a blueberry one about 2 years ago. Both were excellent.

Adding to the dough or only using regular boiled potatoes in cakes/biscuits and such (other than focaccia pugliese) is a tradition in Italy especially in the South
