I have a few meals that I make when hunger overtakes me and I need something satisfying in a hurry. I'll often get immersed in my work or other affairs, then realize I need to eat, and don't have the time to cook something elaborate, so I'll throw something together quickly.
One of my 'go to' meals in these situations is mac and cheese from a box, and then I'll mix in tuna and a vegetable. Often, the vegetable will be french style green beans or peas. The other 'instant' meal is tostadas or nachos. They're basically the same, with just a few differences. The nachos are created with a base of corn tortilla chips, and the tostadas are corn tostadas, with toppings. I use refried beans on the tostadas, and will sometimes, but not always, use them on my nachos. My nachos usually consist of a shredded mix of cheeses and salsa verde. I also use the cheese and salsa verde on my toastadas.
These aren't exactly high quality meals, but that's not the point. They are filling and delicious, and serve the purpose in a pinch.
