This tray bake is very easy to make. It would work equally well using chicken thighs and/or legs. I partially spatchcocked the poussin, by which I mean I removed the backbone and sort of flattened out the poussin (I didn’t twist the legs round which I believe is more traditional). I think its...
Light and creamy, the secret to this risotto’s incredible flavour is finding the right cheese to combine with the sweet taste of the orange.
I chose goat’s cheese that retains a soft, elastic paste with an unmistakable yoghurt aftertaste and gave this risotto a rich, velvety texture that...
This delicious dessert is an interesting combination of a pudding and a tarte: the rice is first cooked in milk, then baked in shortcrust pastry.
Perfect as a snack, or even for a rich breakfast on an autumn day.

This recipe challenge couldn't have come at a better time. I posted a month and a half ago about being in a winter cooking funk, but I had no idea how long it was going to drag on. I seriously hit a point where I had no interest in cooking. But, the dilemma was, of course, that I had to eat, and...
Orange and dark chocolate is a classic combination that I never get bored of.
For these Five-Layered Chocolate Cups I wanted to go one step further than just sprinkling some orange peel on top of the chocolate. The result is a creamy, refreshing dessert.

Hello! Thank you for reading. I am planning to candy orange peel and pineapple to use in a fruit cake today. I'm going to use the same process for candying both of these fruits, but I'm hesitant to candy them in the same pot at the same time for fear the flavor would be affected.
I'd very much...
Green bananas aren’t very sweet and are a good substitute for plantains which can be hard to source in the UK. They are sold as 'ripen at home' bananas in supermarkets. I cooked them separately to retain their shape and texture as there is a tendency for them to dissolve into sauces otherwise...
I used just two duck legs here but to be honest you could use four as there is more than enough sauce produced by the vegetables and fruit. If you use four duck legs then double up on the marinade ingredients.
Serve this with new potatoes or mashed potatoes to mop up the sauce.
This should be served with typical Cuban sides, black beans and rice, yuca, Pan Cubano, tostones or maduros. Yuca is great with the mojo, yuca con mojo. This is one dish where a spicy chili is used.
For the classic sour orange mojo
6 garlic cloves, peeled and chopped
1 Scotch bonnet...
I borrowed the idea of orange with goat’s cheese from Chef Mario Batali who pairs goat’s cheese and orange zest in tortellini. I used home-made goat's cheese but of course you don't need to. Just choose a fairly mild goat's cheese. The poached celery adds a note of anise and some texture to this...

Despite all the steps, this comes together fairly easily. I'll have to try this again without the cornstarch to see if I miss it (it does provide some thickening, but 3 tablespoons is a small amount for this much food).
1 1⁄2 lbs boneless skinless chicken thighs, cut in 1-inch...
