“Speviled” Eggs (SPAM-deviled eggs)
Makes 12 deviled eggs halves

Ingredients
6 large eggs, hard-boiled and peeled
4 ounces (1/3rd can) SPAM, diced small
1 1/2 TB sour cream
1 TB mayonnaise
1 1/2 tsp prepared mustard
1 tsp sugar
1 tsp white wine vinegar
1 pinch cayenne pepper
Salt and freshly-ground black pepper, to taste
Various garnishes, optional (paprika, olive slices, pickle slices, green onion tops, etc)

Directions
Halve the eggs, place the yolks in a large mixing bowl and set aside the whites.

Add the remaining ingredients to the bowl (minus the garnishes, if using). Mash thoroughly with a fork and mix well, to desired consistency.

Using a piping bag, plastic bag, or a spoon, fill the egg halves with the yolk mixture and top with optional garnishes.
