Recipe Baked Cheddar Olive Balls

These tasty baked cheddar cheese and olive balls are delicious and the recipe is quick and easy! This recipe is courtesy of my mother-in-law, with a little tweak from me with the addition of grated parmesan cheese. I have no idea where she got it and she doesn't remember, but she has been making them far longer than I have known her (21 years). I recommend doubling the batch and freezing some of them for a quick reheat at another time (10 minutes at 350F).

Preparation and cooking time: approximately 35 minutes
Makes 35-40 cheddar olive balls

Ingredients:
1 stick softened butter
8 ounces of grated sharp cheddar cheese--room temperature
2 tbsp grated parmesan cheese
1 cup AP flour
1/4 tsp paprika
35-40 pimento-stuffed pitted green olives

Preparation method:
Mix all ingredients together except for the olives.

Pinch off a small amount of the mixture and flatten in the palm of your hand. Place an olive in the center and form into a small ball (a little larger than the size of a cherry tomato).

Place on an ungreased non-stick baking sheet.

Bake at 400F for 15-20 minutes.
