I'd always assumed that due to their moisture content, mushrooms didn't freeze well. Do you ever freeze mushrooms? If so, what is the best method to use?

I don't - I prefer to dry. But I have bought frozen mushrooms - Lidl did a frozen wild mushroom mix that were ok. Not too terrible if thrown straight in frozen during cooking.
Might freeze ok too after cooking/frying.

I don't freeze them, for that reason - too much water content, so when you de-freeze, they taste of nothing.

We've purchased fresh frozen porcini previously. You prep/cook them from mostly still frozen.

I always freeze excess mushrooms.
Field or button mushrooms, cut up as you intend to use them, and just freeze. I typically do not defrost them prior to cooking.
Oyster and other "wild" mushrooms i generally cook first.

I cook them first, then freeze and use.
They will be soft and you may have to cook of the excess liquid. But it works and is better than throwing them out
