Not much to it - tomato paste and water in 1:3 ratio. TBH I hardly do this now, I just use tomato paste directly from the tube into the pan and then add a a bit of water. The curry is reduced down anyway. You can use fresh or canned tomato for variety as well.

- 2 tbsp double concentrate tomato paste.
- 6 tbsp water.
- Mix well.
