Brown sugar makes a great mix with cinnamon, and I suddenly realised both go very well with apples too. So today I made these cupcakes.
For one 12 hole muffin tin:
200 g melted butter ( lightly salted or neutral, up to you)
150 g dark brown sugar
2 peeled & roughly grated medium green apples or cooking apples
2 medium eggs
200 g self rising flour
1 tbsp cinnamon
1/2 teaspoon vanilla powder ( optional)
12 cupcake forms
1) Preheat oven to 180 c upper and lower heat. Put cupcake forms into the muffin tin.
2) Mix eggs, sugar , cinnamon & vanilla and cooled melted butter together in a bowl. It should look like this:
3) Then mix in flour, and after you reach a glossy dough substance add the grated apple.
4) Grab an ice cream spoon and ladle dough into cupcake forms. It should look like this:
5) Bake in oven for 30 mins. The finished cakes look like this:
6) Let cool for at least 2 hours and serve with whipped cream or custard!
