Another of my old recipes and this time Butter Beans (Great Northern Beans).

Butter Bean Burgers
These burgers can be frozen uncooked for around 3 months.
Makes 4 burgers.

Ingredients
4tbsp veg oil
1 onion, finely chopped
1 clove of garlic, crushed
1 medium carrot, grated
1 medium courgette, grated
2 tsp grd cumin
1tsp grd fenugreek
1/2 tsp chilli powder
2 * 420g cans butter beans, drained and rinsed
75g wholemeal breadcrumns

For the dip
225g Greek style yoghurt
100f cucumber, grated
3tbsp chopped fresh mint
1 garlic clove, crushed
season

Method
  • heat half the oil in a frying pan, add the onion and cook for 4 minutes. Add the Garlic, carrot, courgette and spices and cook, stirring for another 2 minutes.
  • Transfer half the mixture to a food processor and add the butter beans and breadcrumbs. Process to a firm paste.
  • Stir in the remaining mixture and season to taste.
  • Divide into 4 and shape into 10cm burgers.
  • Heat the remaining oil in a frying pain and cooked the burgers for 8-10 minutes, turning once.
  • Mix all the ingredients for the dip together and serve with the burgers.

These sound delicious and I am guessing they are really cheap to make. My children like all the ingredients you have listed here. I am fairly broke at the moment and this sounds like a meal I could make for my children's lunch with things that I already have in the cupboards at home. If I make it, I wqill let you know how it goes .
 
Sounds good. I think you could probably make this with more or less any kind of bean although I'm very fond of butter beans. I'm always looking for bean dishes these days, so I can use the magic bean juice!!
