Who couldn’t use a bit of an extra kick in their morning smoothie? This is a good way to get a cup of coffee and a smoothie all at once.
If you are better at planning ahead than I am, make the coffee ahead of time and let cool in the fridge. I am not great at planning ahead, so I usually just make the coffee and pour over ice to chill it quickly.
You can make this vegan by using vegan yogurt and non-dairy milk. You can also up the protein content a bit by using high-protein greek yogurt, high-protein soy milk, and even adding a scoop of protein powder if you would like.
Ingredients:
3 tbsp rolled or quick-cooking oats
3 heaping tbsp yogurt
1/4 cup milk, any kind you like
2 tbsp almond butter
1 tbsp maple syrup (adjust up or down to taste)
1/2 tsp vanilla
1/2 cup coffee, cold
Throw everything in your blender and blend until smooth. Makes 1 drink.
