It's quite common in Vietnam, esp for banh mi
The recipe is based on the little book "bahn mi" by Andrea Nguyen, but I think she complicated things a bit.
I work in ratio's, hence no fixed amounts
Ingredients
Equal amounts of carrots and daikon by looks
Vinegar
Water
Sugar
Salt
Cut daikon and carrot in about 7.5 cm sticks, about. 0.5 x 0.5 cm thick.
Mix with 1 tsp salt and 2 tsp sugar (or anything in that ratio)
Massage for 3 minutes or until the sticks become a bit supple
Rinse
Put in a jar
Estimate how much liquid you need to cover, use a bit more vinegar that water (4 water to 5 vinegar) add sugar to the vinegar and lukewarm water 1 sugar to 5 vinegar/water by weight (100 gr sugar for 500 ml liquid)
Stir till the sugar is dissolved and pour over the carrot/daikon strips
Use after an hour or more. Keep in the fridge
I used the same amount of dailon & carrots for the 2nd batch,
They got "cut" lengthwise with a potato peeler.
All in a jar.
Vinegar and water got mixed in the same ratio as above with sugar and a sniff of salt (+ a little coriander, cumin and chili powder*) and then boiled and poured hot over the carrot/daikin mix
Note: I used about half the sugar that was asked for as I don't have a sweet tooth
* Powdered as I was not home and I could not find whole coriander and cumin
