Recipe Carrot salad

This is a super easy side dish, typical from the Algarve in the south of Portugal

Ingredients:
- Carrots (I used around 8 small carrots for this)
- Coriander or parsley
- 4 small garlic cloves
- Salt, vinegar and olive oil to taste

1. Slice carrots and boil them until you can insert the tip of a knife in the carrots without much resistance.
2. Let the carrots cool (you can cool them in the fridge to cool them faster).
3. Mince garlic (I use a garlic press) and finely slice the coriander/parsley, and add them to the cold carrots.
4. Season with salt (I use fleur de sel but you can use regular salt if you prefer), olive oil and vinegar and mix everything.
