Recipe Carrot Salad

Well this is the sort of dish I am happy with and I've even made several versions of carrot Salad. I decided to share this one I found online.

Ingredients
  • Mayonnaise - 2/3 Cup
  • Fresh Lemon Juice - 2 Tablespoons
  • Salt - 1/2 Teaspoon
  • Sugar - 1 Tablespoon
  • Grated Carrots - 4 Cups
  • Crushed Pineapple, Well Drained - 1-20 Ounce Can
  • Raisins - 1 Cup
  • Pecans, Coarsley Chopped - 1 Cup
Instructions
1. In a small bowl add mayonnaise, lemon juice, salt and sugar and whisk until well combined.

2. In a medium bowl add carrots, pineapple, raisins and pecans. Pour mayonnaise mixture over carrots and toss until well combined.

This has my name written all over it.

I might cut back on the mayo and possibly try to make my own one of these day as the mayo I love got quite a knocking here some time ago. I've also started using Stevia in my salads, and hopefully that's better for my health.
 
It actually does sound and look really good. I don't eat a lot of mayo so I would like to experience with a different dressing for the salad. I like everything else that is in it. I want to try this. Another recipe to add to the "List."

What might you substitute for the mayo? I am thinking to try getting accustomed to a lite mayo or sour cream maybe? And the thing with carrots is that they already have a good flavour which I think makes it sort of easy to work with.
That said I am going ahead and entering my Carrot Salad in the competition.

I sometimes substitute Greek style plain yoghurt with a hint of french mustard for mayo.
 
Carrots are always my favorite part of any salad. This is so perfect for me!
I think it would be really cute to serve for Easter too. It really works with the Spring season.
