Recipe Cavatapi Macaroni Salad

Cavatapi Macaroni Salad:

Ingredients:

1) Cavatapi Pasta - 2-1/2 cups
2) Eggs - 2
3) Celery - 2 Sticks
4) Anaheim pepper - 1/2
5) Onion - 2 slices
6) Tomato - 1
7) Carrots, baby - 8 to 10
8) Stone ground mustard - 2 tblspns
9) Mayonnaise - 1/2 cup
10) Black pepper - 2 tspns.

NOTE: Makes 2 servings


Procedure:

1) Hard boil (10 minute) the eggs.
2) Peel the shells off the eggs.
3) Chop up the eggs.
4) Dice the celery, pepper, onion, carrots and tomato.
5) Boil the pasta till soft.
6) Drain the pasta and cool with cold water.
7) Drain the pasta again.
8) Mix all ingredients, carefully, to avoid mashing the pasta.
9) If desired, chill by refrigeration.
10) Serve.

I am not a big fan of elbow macaroni. Ditalini may be ok for some soups, but for a hollow tube pasta, the ridged spiral cavatapi is wonderful.
