Recipe Cheese on egg on ham on toast

A really basic recipe! The trick here is to fry the egg until the yolk is just done, so that when its grilled (broiled in US) the yolk stays runny under the melted cheese. When you cut into it, the yolk should burst delightfully and ooze onto the plate. I really should have photographed that!

Ingredients:
Bread, Egg, Ham, Mustard, Cheese (I used Cheddar).

Method:

  • Grate the cheese or slice fairly thinly.
  • Fry the egg, basting the top with the frying oil or butter. Stop whilst the yolk is still runny. Set aside.
  • Toast the bread and place under grill (broiler) with as much ham as you want on top and heat briefly.
  • Spread mustard over the ham (I used English mustard) and place egg on top then cover with cheese.
  • Place under the hot grill (broiler) until cheese melts.
