Recipe Chicken pickle

Ingredients
Boneless chicken cut into small cubes (about 1cm)
4tsp Chilli Powder
4tsp Salt
4tsp Ginger Garlic Paste
1/2 cup Lemon Juice
2tsp Mustard powder
1/2tsp Cumin powder
1/2tsp Fenugrek
Handful Curry Leaves
2tsp Cumin Seeds
2tsp Mustard Seeds
1/2tspTurmeric Powder

Method
Deep fry the chicken cubes (in batches) until dark brown
Take 4 tbsp of the oil and add to a saucepan
Cook the cumin and mustard seeds for 1-2 minutes. Add curry leaves then ginger and garlic paste and cook for a further minute
Take off heat and add rest of the ingredients.
Mix with the chicken.
Once cooled put in a jar with a lid.

Serve with curry or naanbread/chapatti/...

When I saw the title of this recipe I thought - that sounds odd. Then I thought - well why not? Most interesting and really something I've never come across. Do you think it would make a good sandwich filling?

No, I dont think so as it's chewy.

We first tried chicken pickle at lunch with my husband''s colleague who made food particular from the region of India from where he and his wife were brought up.

Garlic pickle (whole cloves) makes a nice sandwich filling though. I'll make that again soon and post.
