Chile/Chili/Chilli peppers

I just leave the chili's that I can't use straight away on the counter.
They will dry "automatically" most of the year.
But rainy season now, so I build a drying rack and am going to use a little fan at night
I did that for beef jerky in 'Vegas. Box with a hair dryer in the bottom and holes in the top.
 
I had always thought of Aji Amarillo as a sauce, because this is how I've seen it used.
It's used in many ways in Perú; it's a popular chile. They make jam (utterly divine), sauce, and other delicious recipes (like Ají de gallina - chicken chile) with it. Very versatile and sweet.

Got you on chili country. I lived in Las Vegas for decades and routinely drove around NV, UT, and AZ to repair HVAC systems.

This year I grew Big Jim, cayenne, shishito, and bell peppers. I'll be adding a Thai hybrid next year; my tolerance is going up... 🥵
 
Don't/can't do hhhhot chili. I'm more about flavour. Regular medium is about as hot as I can go 😅 There are some really great local SW Pueblo chile cultivars. Would also like to get my hands on some of karadakoolaid's local mild chile cultivars 😁

Ever had shishitos??? They're not hot. Can't get them here but they're everywhere in 'Vegas with the Asian stores. First ones I harvested here I roasted with sesame oil and salt... 🤤

They're the ones on the right.
