I've made this to go with dinner tonight and it already smells and tastes lovely.
Main ingredients
1 lime thinly sliced and cut in segments.
2 tsp chopped ginger
1 tsp chopped garlic
1 chopped green chillies
1/2 tsp salt
1/4 tsp turmeric
Temper
1/3 cup veg oil
1 tsp yellow mustard seeds
1/2 tsp brown mustard seeds
1/2 tsp black mustard seeds
1/2 fenugreek seeds
Mix the main ingredients and leave aside.
Heat oil for the temper and add mustard seeds until they pop and add fenugreek.
Add really hot oil/spice mixture to the lime/chilli mixture and leave with lid on until cool.
I will serve this tonight with a vegan curry but I think it would go really nicely with fish curry so might try that tomorrow.
