Chips, French Fries, Wedges and Any Other Hot Stick Shaped Potatoes

Sometimes thick cut, sometimes thin.
Sometimes sliced.
Generally double fried, but sometimes single fried starting with cold oil (seen Heston Blumenthal do this and he got crispy chips)
They gotta be crispy!

I eat them sometimes plain salted, sometimes spiced with paprika, chii powder & salt.
Sometimes with satay sauce.
Never with mayonaisse or ketchup.

And sometimes different from what I just described :hyper:

I wanted to make some poutine with stewed lamb shank and gravy but couldn't find cheese curds other than the breaded frozen kind (Walmart). Heck, we are only 4 hours from Canada (Niagara Falls) so I don't know why they are so hard to find up here.
I’m also fancying poutine!
But the curd part of it isn’t easy to buy here. Then I saw this thing for freezing kefir and thought it could work well (if not beaten into cream cheese).

I'm not real keen on the rennet, though. Yes, I know that it's used in cheese making regularly but...
Well yes could do but this method involves just freezing and defrosting a carton which appeals to my lazy side and tbh I think of poutine as lazy food 😂
 
The hash brown waffles were a huge hit.
I defrosted a couple of bags of hash browns and used a hand mixer to break them up. Added two finely diced red onions, garlic, smoked salt, paprika, white pepper and three eggs into the mix for a good bind. They also have a layer of cheese in the centre.

The waffle maker is so much better than the cheap one I started off with. It has a floating hinge so you can pile up the hash brown mix quite high and it still closes n cooks evenly 👍
 
Got a link for Blumenthal's cold oil method? I looked buy found on his triple-fry.
It's in one of his books.
Lemme see what I can find.
But basically, cut chips, put in pot with cold oil and heat up very slowly till chips are done.
(It takes a long time, so generally I get impatient after a while, then remove chips. Heat oil to about 185 °C and put chips back)
 
There is Nigella recipe for chips (fries) cooked this way. I tried it once and it didn't work. Unusual, sInce whatever you think of Nigella her recipes do tend to work.
I think her recipes do what they’re supposed to but I’ve come across many that aren’t complete or rely on you knowing how much of something to add. There’s a lot of ‘to taste’ elements in her recipes which her actual ingredients list doesn’t quite get right.

I sympathise with that though.
When my sons ask me for a recipe I often think hmm I don’t know I added some them added some more then there was a little pinch more and sure enough soon I couldn’t say how much of something I’ve added 😂
